If you haven’t gotten your greens in for the day, this spinach pie is the perfect side for loading up on your B vitamins. Spinach is very low in carbohydrates and is one of the best keto vegetables you can eat! A layer of melted cheese is an added bonus! Spinach pie will complement just about any main dish you could think of.
Ingredients
- 2 ½ ounce spinach
- ¼ cup ricotta cheese
- 2 large raw egg
- 1 teaspoon salt
- 1 ½ teaspoon black pepper
- 1 cup, shredded parmesan cheese
Instructions
- Preheat the oven to 375 degrees. In a bowl, combine the chopped spinach with all the remaining ingredients except for the parmesan.
- Spray a shallow baking dish with pan spray, and pour the mixture into the dish. Spread the shredded parmesan cheese over the top, making sure the filling is completely covered.
- Bake the dish, uncovered, for about 25 minutes or until the spinach is soft and wilted and the cheese is golden brown.
- Serve hot with your main dish!
