This delicious, yet simple egg salad will be your new go-to lunch. Creamy eggs are coated in a nice creamy mayo and accented with sweet, fresh peas. Serve this on a keto-friendly bread like the Keto Loaf Bread or Keto Artisan “Sourdough” bread.
Ingredients
- 6 large raw egg
- 2 tablespoon classic mayonnaise by sir kensingtons
- ¼ teaspoon coarse kosher salt by morton
- ¼ cup frozen peas
Instructions
- Bring a medium-sized saucepan filled with water to a boil. Once the water is boiling, add the eggs carefully into the water. Boil for 8 minutes.
- Drain the hot water and add ice to the top of the pot. Add in cold water to cover the eggs and allow them to sit and chill until cold.
- Remove the eggs from the shells.
- Smash the eggs with a fork.
- Then add the mayo, salt, and peas.
- Smash everything to ensure it is all homogenous. Serve on top of lettuce or keto-friendly bread.
