This quick and easy scramble is loaded with protein from eggs, pancetta and tuna and tossed with aromatic basil to serve.

This makes a great keto breakfast or brunch served on its own or with keto toast.

Ingredients

  • 2 ounce tuna
  • 2 large raw egg
  • 1 ½ ounce diced pancetta by waitrose
  • 1 tablespoon basil, fresh
  • ½ tablespoon olive oil
  • ⅛ teaspoon black pepper

Instructions

  1. Heat the olive oil in a skillet over a medium heat and add the pancetta. Cook through until golden.
  2. Whilst the pancetta cooks, crack the eggs into a mixing bowl and flake in the tuna. Season with pepper and beat together to combine.
  3. Pour the beaten egg mixture into the skillet and leave to settle, then scramble with a wooden spoon until cooked through. Roughly chop the basil into the eggs and stir through to serve.
