These cauliflower steaks are rich with butter and accompanied by a creamy blue cheese sauce.
These are a great accompaniment to grilled chicken or pork with a simple side salad.
Ingredients
- ½ small – head – 4" diameter cauliflower, raw
- 1 tablespoon unsalted butter
- ⅓ cup blue cheese
- ⅓ cup cream cheese spread
- ⅓ cup heavy cream
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Preheat the oven to 400 degrees Fahrenheit.
- Slice the cauliflower into 4 cross-sectional slices, roughly 1/2 inch thick.
- Heat the butter in a frying pan and add the cauliflower slices (you may need to do this in two batches). Season with salt and pepper and cook for 2 minutes each side until lightly golden. Then transfer to the oven to bake for a further 10 – 12 minutes until golden brown and tender.
- Whilst the cauliflower bakes you can prepare the sauce. Add the cream to a small pan and bring to a very gentle boil over a low heat, stirring often. Add the blue cheese and cream cheese to the pan and continue to stir until the cheese has melted. Simmer for a further 2-3 minutes until you have a thick sauce.
- To serve, drizzle the blue cheese sauce over the cauliflower steaks.
