If you love cinnamon, you will love this cinnamon roll mug cake topped with a sweet cinnamon glaze! Ready in under 5 minutes.
Ingredients
- 1 ½ tablespoon butter
- 3 tablespoon almond flour
- 4 tablespoon the ultimate icing sugar replacement by swerve
- ½ teaspoon baking powder
- 1 large raw egg
- ½ teaspoon brown sugar replacement by swerve
- ¼ teaspoon cinnamon
- 1 teaspoon the ultimate icing sugar replacement by swerve
- ½ teaspoon water
- ⅛ teaspoon cinnamon
- ¼ teaspoon vanilla extract
Instructions
- In a tall coffee mug (> 10 oz), melt the butter in the microwave for 20 seconds or until melted.
- Add the almond flour, 4 T Swerve icing sugar, vanilla extract, baking powder, and the egg. Mix well to combine.
- Remove ¼ of the batter out and add to it ½ t Swerve brown sugar and ¼ t cinnamon. Mix to combine.
- Add the cinnamon mixture back into the mug and swirl it into the batter using a skewer to create a swirled effect.
- Microwave this on HIGH for 45-50 seconds until cooked through.
- In the meantime, combine 1 t Swerve icing sugar, 1/2 t water, and ⅛ t cinnamon. Pour this over the hot cinnamon cake!
