These quick and easy beef lettuce cups are stir fried with crisp radishes, tender mushrooms, tangy tamari sauce and smoky sesame.
These make a great hot lunch or light dinner.
Ingredients
- 7 ounce ground beef
- 4 inner (small) leaf romaine lettuce
- 3 medium – 3/4" to 1" diameter radish
- 2 medium mushrooms
- 1 tablespoon olive oil
- 1 tablespoon tamari sauce
- 1 teaspoon sesame oil
- ½ teaspoon, whole pieces sesame seeds, hulled, toasted, unsalted
- ½ teaspoon hot chili pepper, dried, with seeds
- ¼ small red onion
Instructions
- Thinly slice the radishes, onion and mushrooms. Heat the olive oil in a skillet over a medium heat. Add the beef, cooking until browned all over. Add the onion.
- Add the mushrooms and radishes. Continue to stir fry over a medium/high heat for 3-4 minutes more until the vegetables are fork tender.
- Add the tamari sauce, sesame oil and chili flakes. Stir well to combine and cook for just a minute to heat through.
- Divide the beef stir fry between the four lettuce cups and scatter with the toasted sesame seeds to serve.
