This quick and easy keto dish pan fries Brussels sprouts and broccoli until tender with sweet maple flavored syrup, balsamic vinegar and tangy goats cheese.

This is a great option to add a bit of zing to Sunday lunch!

Ingredients

  • 2 tablespoon olive oil
  • 2 tablespoon goat cheese, soft
  • 2 teaspoon maple flavored syrup by lakanto
  • 1 clove garlic
  • 1 cup brussels sprouts, raw
  • 1 cups broccoli florets
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon lemon peel or zest raw
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Thinly slice the sprouts, dice the broccoli into bite sized pieces and crush the garlic. Heat the olive oil in a large skillet over a medium heat and add the broccoli, cooking for a minute, then add the sprouts, lemon zest and garlic. Season and stir well to combine. Stir fry for 2 minutes until the vegetables are tender.
  2. Add the syrup and balsamic and stir fry for a minute or two more until the vegetables are fork tender and golden at the edges.
  3. Crumble over the goats cheese and stir through the vegetables to serve.
