About

These simple pork chops are crispy, salty, and perfect for pairing with keto side dishes or cutting up over a salad! A pork rind breading is the secret to this recipe, making your prep work very easy.

Ingredients

  • 3 ½ cup, whole pieces fried pork rinds
  • ¼ cup, shredded parmesan cheese
  • ⅛ teaspoon salt
  • ¼ teaspoon black pepper, ground
  • ¼ teaspoon garlic, powder
  • ¼ teaspoon onion powder
  • 1 ½ teaspoon mustard powder
  • ½ teaspoon paprika
  • ½ large raw egg
  • ½ pound pork loin boneless center cut chops thin sliced by kroger

Instructions

  1. Preheat an oven to 375 degrees. Create your pork rind breading by pulsing the pork rind, parmesan, salt, pepper, garlic, onion powder, mustard powder, and paprika in a food processor until you have a fine crumb.
  2. Prepare all your ingredients: spread the pork rind breading on a plate, whisk an egg in a small bowl, line a sheet tray with parchment paper, and pull out 5 thin-sliced pork loin chops.
  3. One by one, dip each pork chop in the egg, let any excess drip off, press both sides of the pork chop in the breading, and lay each one down on the parchment paper.
  4. Bake the tray for 40 minutes. Flip the pork chops over and bake for an additional 12 minutes. This recipe here was garnished with chopped parsley and lemon zest!
