These tasty greens beans are cooked until tender then sautéed with earthy mushrooms, sweet cherry tomatoes and aromatic seasonings.
This is a versatile side dish, perfect served with meat, fish or a vegetarian or vegan main.
Ingredients
- 5 ounce green beans (string beans), raw
- 4 cherry cherry tomato
- 2 medium mushrooms
- 1 clove garlic
- 1 teaspoon italian seasoning
- 1 tablespoon white onion
- 1 tablespoon olive oil
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Add the green beans to a small saucepan of boiling water. Add a little pinch of salt and simmer for 3-4 minutes until fork tender. Drain completely and steam dry.
- Whilst the beans are simmering, crush the garlic, finely dice the tomatoes and thinly slice the mushrooms. Heat the olive oil in a skillet over a medium heat. Add the onion, garlic, mushrooms, tomatoes, and Italian seasoning. Stir well to combine and sweat gently for 2-3 minutes until tender and fragrant.
- Add the green beans to the skillet, season with a little salt and pepper and stir well. Cook for a minute or two more until hot through.
