Ice cold, fizzy, sparkling water is poured on top of a fresh strawberry coulis. The sweet and tart strawberry flavors are so refreshing! This recipe is super easy to scale up to make ahead for a summer party, get-togethers, or for yourself. Feel free to use any flavor of sparkling water you would like.

How do you make a strawberry coulis?

Strawberry coulis is simply a fancy name for a fresh strawberry sauce. Fresh, ripe, red strawberries are blended with sweetener until it turns into a sauce and then chilled. Adding the strawberry sauce at the bottom of the glass, then the ice, and then the sparkling water makes for a nice layering effect. Simply stir before serving.

What kinds of sparkling water can you use?

Any sparkling water with no sugar or sweeteners can be used for this. This recipe used lemon sparkling water, but grapefruit, lime, cherry, and orange would all be great pairings.

Can you use different berries?

Yes, blackberries or blueberries would be delicious in this drink as well! Just be sure to account for additional carbs if you are on a strict Keto diet.

Ingredients

  • 6 ounce strawberries
  • 6 tablespoon the ultimate icing sugar replacement by swerve
  • 4 cup, cubed ice or ice cubes
  • 2 can lemon flavored sparkling water by la croix

Instructions

  1. Place cut strawberries into a blender cup and add sweetener. Blend until smooth with a stick blender. If you do not have a stick blender, a small smoothie blender or food processor will work.
  2. Divide strawberry sauce into the bottom of each cup. Add a few ice cubes to each cup. Pour sparkling water on top of each glass.
  3. Garnish with a lemon wedge, and add a straw! Serve immediately. Give each glass a stir before drinking.
