Each waffle is cooked until golden brown and delicious. We like to mash the banana most of the way, but not all the way, so small bites of banana are in the final cooked waffle. You can top these waffles with softened butter, Keto maple syrup, and a light dusting of powdered sweetener before serving. They are also delicious plain!

If you can’t have almond flour, you can add an additional 2 1/2 tablespoons of coconut flour.

Ingredients

  • 4 large raw egg
  • 3 ½ oz banana, fresh
  • ½ cup almond flour
  • 2 tablespoon coconut flour
  • 2 teaspoon baking powder

Instructions

  1. To begin, plug in a mini waffle iron and allow it to come up to temperature while you prepare the waffle batter.
  2. Mash a ripe banana into the eggs. It is ok if it is not perfectly smooth; this results in a final waffle with some delicious banana pieces.
  3. Combine the dry ingredients, including both flours and baking powder.
  4. Whisk the dry ingredients into the liquid ingredients.
  5. Pour just enough batter to cover the bottom of the waffle iron barely.
  6. Cook the waffles for 5-6 minutes each. They should be golden brown and delicious and remove easily from the waffle iron.
  7. Repeat the process with the remaining batter. Feel free to top the finished waffles with softened butter and Keto maple syrup or real maple syrup if you follow a Paleo diet.
