This chaffle is so crispy and delicious! It is made even more delicious topped with Mexican chihuahua cheese, scrambled egg and Canadian bacon to make a fun breakfast-style pizza. Feel free to sub the cheese for another shredded cheese and Canadian bacon for sausage crumbles or regular bacon.

Ingredients

  • 1 large raw egg
  • 1 teaspoon avocado oil
  • 2 large raw egg
  • 2 tablespoon coconut flour
  • 2 tablespoon mayo
  • ½ teaspoon baking powder
  • 2 slice – 2 1/2" diameter x 1/4" canadian bacon
  • 6 tablespoon, shredded queso chihuahua (chihuahua cheese)

Instructions

  1. Scramble one egg and add a pinch of salt. In a small nonstick saute pan, cook the egg in avocado oil until softly scrambled. Set aside.
  2. Preheat a waffle iron on medium-high heat. Combine two eggs, coconut flour, mayo and baking powder together in a mixing bowl.
  3. Spray waffle iron with high temp grill non stick spray. Pour in waffle batter and cook in iron according to directions.
  4. Remove waffle from the iron.
  5. Top with shredded cheese, diced Canadian bacon and scrambled egg.
  6. Place waffle on a baking sheet under a broil until the cheese is melted.
