You know what we’re talking about: that half yellow and half white egg patty, crispy bacon, gooey yellow cheese, some type of secret breakfast sauce, all sandwiched within a soft English muffin! This keto version won’t look exactly like a replica, but it tastes surprisingly satisfying on those mornings you need a hot, slightly greasy energy-booster breakfast!

*Please note that this recipe requires Carb Manager English Muffins. Please have these already prepared.

Ingredients

  • 2 servings (1 English Muffin/Roll) keto english muffins
  • 2 teaspoon mayo
  • 1 teaspoon tomato ketchup
  • 2 slice – each 3/4 ounce american cheese
  • 2 slice – 6" long bacon
  • 2 large raw egg
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper, ground

Instructions

  1. Have 2 Carb Manager English Muffins already prepared. Slice each muffin in half. In a bowl, combine the mayo and ketchup to make a drive-thru breakfast sauce. Spread the sauce over all 4 english muffin halves.
  2. Lay a slice of American cheese on the base of each sandwich. If you don’t want to use American cheese, cheddar cheese or a mild white cheese works well here too.
  3. Cook the slices of bacon until crispy in a pan. Set the bacon aside to cool and crisp up before placing it on the sandwiches.
  4. To make the egg portion of the sandwiches, the eggs need to be cooked one at a time. Crack one egg into a bowl with HALF the salt and pepper. Use a fork to whisk the egg together only halfway to create the iconic egg yolk/white patty.
  5. There are 2 ways to cook the egg. If you have a small, single-egg pan, use this. Simply poor the egg into the pan and cook on a low heat until the egg patty has cooked through. No stirring or flipping required. Repeat steps 4 and 5 to cook the second egg patty.
  6. The second way to cook the egg patty, if you do not have this small pan, is to use the microwave. Find a microwave-safe cup that has a base equal in circumference to your english muffin. Spray the inside of the cup with pan spray. Pour the half-whisked egg into the cup, and microwave it on high power for 30 seconds. It should not take longer than this to cook, but watch the egg because over-cooking in the microwave will cause it to explode.
  7. This photo shows the two types of egg patty that can be cooked. As soon as each egg patty finishes cooking, immediately place it on top of the American cheese slice to melt the cheese. Arrange the bacon on the other half of the sandwiches and close the sandwiches for eating.
