Keto Egg Fast Cinnamon Sugar Crepes are a delicious way to enjoy your Egg Fast diet! Tender and sweet crepes are filled with a generous amount of cinnamon-sugar mixture. The result is a filling breakfast or brunch that will sustain you throughout the day. These crepes are great to freeze and reheat as needed. Of course, they are so delicious as soon as they are made, they may not make it to the freezer!

What is Egg Fast?

Egg Fast is a short-term diet plan that requires eating mainly eggs, cheese, and butter. It is a weight-loss strategy for those struggling with weight loss plateaus on the Ketogenic diet. It lasts typically for 3-5 days.

What kind of sweetener should I use?

I like to use Swerve (or any other powdered erythritol) or a powdered monk fruit blend as these all are powdered sugar-like in texture.

How can I freeze Egg Fast crepes?

Please freeze them filled and rolled, then lay them side by side but not touching. Be sure to freeze them flat so they do not stick together during the freezing process.

Ingredients

  • 6 large raw egg
  • 5 oz cream cheese
  • 2 tablespoon monk fruit erythritol blend
  • 1 ½ tablespoon monk fruit erythritol blend
  • 1 ¼ teaspoon cinnamon
  • 9 tablespoon butter

Instructions

  1. Be sure to start with softened cream cheese. Blend the eggs, cream cheese, and 2 tbsp granulated sweetener until creamy and smooth. Combine the remaining monk fruit and cinnamon to make the filling.
  2. Heat a small nonstick skillet over medium-high heat. Use 1 tbsp of softened butter for greasing the skillet. Wipe the smallest amount of butter into a thin layer using a paper towel into the pan. The butter should sizzle. Add in ⅛ of the crepe batter and swirl the pan to coat.
  3. Once the top looks tacky, push a spatula underneath the crepe and lift directly up (any other movements will break the crepe), and flip. Cook on the second side for only a few seconds and then remove the crepe to a plate. Repeat with the remaining batter.
  4. Fill each crepe with 1 tbsp of butter each and equally divide the cinnamon-sugar mixture between each crepe.
  5. Roll each crepe and serve with extra butter on top and extra cinnamon-sugar mixture, if desired.
