This quick and easy scrambled egg is cooked with ground pork, aromatic scallions and spicy chili flakes topped with fragrant cilantro.

This makes a great breakfast option or lunch served with cauliflower rice.

Ingredients

  • 4 ounce ground pork
  • 4 medium raw egg
  • 2 large scallions
  • 1 teaspoon hot chili pepper, dried, with seeds
  • 1 tablespoon cilantro
  • 1 tablespoon olive oil
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Add the eggs to a mixing bowl with the salt, pepper and chili flakes. Beat together to combine.
  2. Slice the scallions. Heat the oil in a skillet over a medium/high heat. Add the ground pork and scallions. Stir well and cook the pork through completely.
  3. Add the beaten egg and allow it to settle in the pan for a moment. Scramble with a wooden spoon and continue to cook to preference.
  4. Scatter with fresh chopped cilantro to serve.
