It’s made with crunchy pecans and brazil nuts, which are both known for their healthy fats. This is why granola can be so good for you on the Keto diet. By adding coconut oil to the granola, you’re adding flavor and more healthy fat to the recipe. You can follow some of the guidelines below for serving suggestions or eat the granola as is by the handful. Keep cooled granola stored in either an airtight container or a sealed Ziploc bag at room temperature for up to one week.

Serving suggestions

Granola doesn’t have to be eaten plain! Enjoy this Keto granola in a bowl with ice-cold almond milk. You could also use coconut milk or oat milk. Granola can also be broken up over salads or added on top of main course dishes. Enjoy the granola as a breakfast or a snack!

Xylitol substitutions

Xylitol can be substituted with other Keto sweeteners. The most common would be liquid stevia drops, powdered erythritol, or a monk fruit and erythritol blend. Liquid stevia will add zero carbs to your granola.

Other flavors to add

Only a little cinnamon and some vanilla flavor the original recipe here. Other easy flavoring options you might choose are some simple baking spices like pumpkin pie spice, nutmeg, or a pinch of ginger. Instead of vanilla extract, try almond extract to enhance the nutty flavor of the granola.

Ingredients

  • 1 cup, halves pecans, raw
  • 1 cup, whole pieces brazil nuts, unsalted
  • 1 tablespoon coconut oil
  • 1 tablespoon xylitol by now
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat an oven to 285 F (140 C) and line a shallow oven tray with baking paper. Roughly chop the brazil and pecan nuts into small chunks. The smaller the pieces, the better the recipe will be.
  2. Melt the coconut oil in a dish in your microwave. Add the chopped nuts to a mixing bowl along with the xylitol, cinnamon, melted coconut oil, and vanilla. Stir well to combine, covering the nuts in the oil, sweetener, vanilla and cinnamon.
  3. Arrange the nuts in an even layer across the lined baking tray and transfer to the oven to bake for 30-35 minutes until fragrant and golden brown. Allow to cool completely before serving. Use the granola as a cereal, or see serving suggestions made at the beginning of the recipe.
