Looking for a hearty breakfast that actually keeps you full? This taco omelette is thick and huge! You may even have to save half of it for the next day’s breakfast. Seasoned ground beef is cooked with crunchy peppers. Taco-seasoned eggs cooked with gooey cheddar cheese keep it all together in the omelette. You can amp up your breakfast with crispy shredded lettuce or creamy guacamole too!

Ingredients

  • 1 ½ teaspoon olive oil
  • 1 ounce orange bell pepper
  • 4 ounce hamburger or ground beef, 90% lean
  • ¼ teaspoon salt
  • ½ teaspoon black pepper
  • 2 large raw egg
  • ½ teaspoon cumin, ground
  • 0.12 teaspoon cayenne
  • 0.12 teaspoon onion powder
  • ¼ cup, shredded cheddar cheese
  • 2 teaspoon, chopped cilantro

Instructions

  1. Heat the olive oil in a medium sized pan on high heat. Chop the bell pepper, and toss this in with the ground beef. Cook the ingredients with the salt and pepper until the beef is browned and the peppers get a little tender.
  2. Whisk together the eggs with the cumin, cayenne, and onion powder.
  3. Reduce the pan’s heat to low, and pour the egg mixture over the meat and peppers. Cook the omelette undisturbed until the egg has cooked through. Keep the heat low to avoid burning.
  4. In the final 30 seconds of cooking, sprinkle the cheese over the top of the pan. Allow it to melt with the egg. Then, fold the omelette in half.
  5. Transfer the omelette to a serving dish, and sprinkle the cilantro over the omelette as a garnish. Enjoy!
