The best part about the air fryer is that it creates browning on the edges of the cookie, unlike cooking it in the microwave. The cookie is made from a combination of grass-fed butter, almond flour, granulated sweetener, egg, vanilla extract, and dark chocolate chips.

What if I don’t have an air fryer?

If you don’t have an air fryer, you can cook the mug cookie in the microwave on high 45 seconds to one minute. Alternatively, you can cook it in a 350 F oven until baked through.

What if I am dairy-free?

If you have a dairy sensitivity, please use ghee or coconut oil for this recipe in a 1:1 replacement for the butter.

My chocolate chips melted when I added the other ingredients. What should I do?

Do not mix in the chocolate chips, but place them directly on top of the mug cookie before baking.

Ingredients

  • 1 tablespoon butter
  • 3 tablespoon almond flour
  • 1 tablespoon monk fruit erythritol blend
  • 1 large raw egg, yolk
  • ⅛ teaspoon vanilla extract
  • 1 tablespoon chocolate chips, sugar free

Instructions

  1. Add the butter to a 4 oz ramekin. Place it in an air fryer basket and cook at 350 F for 2 minutes or until melted (length of time here could be longer if you start with cold butter versus room temperature).
  2. You do not need to remove the ramekin from the basket as it will be hot. Once butter is melted, add in the almond flour, granulated sweetener, egg yolk, and vanilla extract. Mix well.
  3. Next, top the mixture with chocolate chips.
  4. Bake in the air fryer at 350 F for 6-7 minutes or until golden brown on top. Serve immediately!
