Chia seed pudding is one of the best desserts to eat when you’re craving something sweet on the Keto diet. This recipe doesn’t even use sweeteners; it only uses the flavors of extract. For a little extra fun, you can use food coloring to turn the pudding a light green. If you could turn mint chip ice cream into a dessert that’s friendly to your diet, it would be this pudding!

Ingredients

  • ¾ cup almond milk
  • ¼ teaspoon vanilla extract imitation no alcohol
  • ¼ 1/2 teaspoon peppermint extract
  • 2 tablespoon, whole pieces chia seeds
  • 3 gram dark chocolate chips, 60%-69% cacao

Instructions

  1. In a bowl, whisk together the almond milk, ¼ tsp vanilla extract, ⅛ tsp peppermint extract, and chia seeds. Cover the bowl with plastic wrap, and leave the bowl in the refrigerator overnight for the chia seeds to absorb the liquid – up to 12 hours.
  2. The next day, stir the chia pudding together and spoon the dessert into serving bowls. Top each chia pudding off with a few mini chocolate chips.
  3. Enjoy!
