This sorbet is dairy free! A little coconut milk adds flavor and keeps the sorbet a little rich. Each bite is tart from the lime flavor and smooth from the coconut. Use as a palate cleanser or enjoy as a dessert on a hot day.

The original recipe here makes approx. 1 ½ cups sorbet.

Ingredients

  • ⅓ cup boiling water
  • 1 serving jell-o jell-o gelatin dessert sugar free lime low calorie by kraft
  • ⅓ cup coconut milk
  • 6 ice cube ice or ice cubes

Instructions

  1. Bring the water to a boil quickly over your stove. Once to a boil, transfer the water to a heat-safe bowl and stir in 1, .3-oz package of lime jello. Continually stir until all the gelatin is dissolved.
  2. Pour the lime gelatin base into a blender. Add in the coconut milk and 2 ice cubes.
  3. Blend the sorbet together. Then, keep blending in 2 ice cubes at a time until all are blended in. The sorbet will become thick and a little frothy. At your discretion, you can add even more ice cubes to make a sorbet firmer. Serve immediately.
