About

This frozen yogurt bark uses unsweetened cocoa powder to create a rich chocolate flavor along with unsweetened chocolate chips. The bark is finished with sweet sliced strawberries before being set. Perfect for snacking or dessert!

Although the recipe uses erythritol, you can omit this completely if you prefer or use your own preferred low carb sweetener.

Ingredients

  • 3 large – 1 3/8" diameter strawberries
  • 1 ¼ cup yogurt, plain, whole milk
  • 1 tablespoon 100% pure erythritol by now
  • 2 tablespoon cocoa powder, unsweetened
  • 1 tablespoon 100% cacao unsweetened dark chocolate baking chips by pacha

Instructions

  1. Line an 8 x 8-inch freezer-proof tray or dish with baking paper. Add the yogurt, cocoa powder, and erythritol to a mixing bowl and stir until smooth. Add in the chocolate chips and stir through to combine.
  2. Spoon the mixture evenly into the lined baking tray so that it is level. Slice each strawberry into three pieces, then arrange across the yogurt an equal distance apart.
  3. Transfer to the freezer to set for 2-3 hours, then using a warm knife, slice into 9 squares.
