Rich and indulgent, this whole baked Camembert makes a decadent lunch or a luxurious snack – it also makes a tasty treat for dinner party guests!

The cheese is complemented perfectly by sweet caramelized onions and topped with crushed pecans for added texture.

The recipe calls for ready boxed Camembert -this is ideal for baking in!

The serving suggestion is for one person, however this would work just as well as a shared snack or side for 2 people.

Ingredients

  • 9 ounce camembert cheese
  • 1 clove garlic
  • 1 teaspoon xylitol sweetener
  • 2 teaspoon pecans
  • 1 teaspoon rosemary fresh
  • ½ small red onions
  • ½ tablespoon balsamic vinegar
  • ½ tablespoon olive oil

Instructions

  1. Preheat the oven to 360 degrees Fahrenheit.
  2. Remove the wrapping from the camembert and very carefully use a sharp knife to remove the top layer of rind from the cheese. Place the cheese back into the box and score the top.
  3. Slice the garlic and chop the rosemary leaves, inserting them into the scores in the cheese.
  4. Place the cheese in the box onto a shelf in the middle of the oven. Bake for 20 minutes until melted and gooey.
  5. While the cheese bakes, add the onion, oil, vinegar and xylitol to a frying pan over a low/medium heat. Fry gently until sticky, sweet and caramelized, stirring frequently. This should take about 20 minutes.
  6. To serve, top the melted cheese with the sweet onions and crumble the pecans over the top.
