These simple yet delicious lettuce cups are loaded with spiced chilli beef and topped with a sprinkling of tangy cheddar cheese.
These are a great lunch served hot, or you could prepare the beef in advance and add cold to lunch box salads.
Ingredients
- ½ pound ground beef
- 1 tablespoon olive oil
- ¼ medium – 2 1/2" diameter x 2 3/4" green bell pepper
- ½ cup beef broth, bouillon or consomme, homemade
- 2 teaspoon tomato puree
- 1 teaspoon chili powder
- ½ teaspoon gourmet collection smoked paprika by mccormick
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon cumin, ground
- 1 teaspoon oregano, dried
- ¼ cup, grated cheddar cheese
- 4 inner (small) leaf lettuce, romaine or cos
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Heat a tablespoon of olive oil in a large pan over a medium/high heat. Add the beef and cook until browned all over.
- Finely dice the pepper and add to the pan with the beef along with all the spices, seasonings and tomato puree. Stir well to combine.
- Add the beef stock to the pan and simmer for 15 minutes until all the liquid has been absorbed.
- To serve, divide the chili between the four lettuce cups and scatter over the grated cheese.
