This delicious, yet simple egg salad will be your new go-to lunch. Creamy eggs are coated in a nice creamy mayo and accented with sweet, fresh peas. Serve this on a keto-friendly bread like the Keto Loaf Bread or Keto Artisan “Sourdough” bread.

Ingredients

  • 6 large raw egg
  • 2 tablespoon classic mayonnaise by sir kensingtons
  • ¼ teaspoon coarse kosher salt by morton
  • ¼ cup frozen peas

Instructions

  1. Bring a medium-sized saucepan filled with water to a boil. Once the water is boiling, add the eggs carefully into the water. Boil for 8 minutes.
  2. Drain the hot water and add ice to the top of the pot. Add in cold water to cover the eggs and allow them to sit and chill until cold.
  3. Remove the eggs from the shells.
  4. Smash the eggs with a fork.
  5. Then add the mayo, salt, and peas.
  6. Smash everything to ensure it is all homogenous. Serve on top of lettuce or keto-friendly bread.
