About

For a simple meal, this big pot of garlicky lemon mussels is just the ticket. The recipe is easy enough to follow, and you can happily enjoy picking fragrant mussels from their shells. Enjoy them by themselves for a lunch, or you can have a larger meal by including multiple Carb Manager side dishes.

Ingredients

  • 1 pound mussel, raw
  • 1 cup chicken broth
  • 2 clove garlic
  • ¼ teaspoon salt
  • ½ teaspoon black pepper
  • 3 wedge – 1/8 of medium lemon

Instructions

  1. Make sure your mussels are cleaned and properly rinsed. Place the mussels in the bottom of a large pot so they cover the bottom without piling on top of each other. Pour in the chicken broth and drop in the garlic cloves.
  2. Cover the pot and simmer the mussels on medium heat for about 10 minutes. If you are cooking fresh, not frozen, mussels, cook until the mussels open.
  3. For serving, transfer the mussels with their broth to a serving dish. Sprinkle the salt and pepper over the mussels. Include wedges of lemon for squeezing.
