This simple keto sandwich is made with fried halloumi slices in place of bread and filled with creamy avocado, sweet roasted bell pepper and a spicy harissa mayonnaise.

A great lunch option served with a green salad!

Ingredients

  • 4 ½ ounce haloumi cheese by papouis
  • ½ tablespoon mayonnaise, store bought
  • ½ teaspoon harissa paste by trader joe's
  • ¼ each avocado
  • ¼ medium – 2 1/2" diameter x 2 3/4" red bell peppers, sweet, raw or blanched, marinated in oil mixture

Instructions

  1. Slice the halloumi into two even slices. Add to a dry skillet over a medium/high heat and fry for 2-3 minutes each side until golden brown. Set aside.
  2. Add the mayonnaise to a small bowl with the harissa and mix to combine.
  3. Smother one slice of cooked halloumi with the spicy mayo.
  4. Layer with the roasted bell pepper.
  5. Thinly slice the avocado and arrange over the pepper.
  6. Top with the remaining halloumi slice to serve.
