These flavorsome savory pancakes are a great option for lunch or brunch served with a simple green salad.

Ingredients

  • 1 ¾ ounce goat cheese, soft
  • 2 servings (2 pancakes) keto savory pancakes
  • 2 slice prosciutto
  • 2 tablespoon olive oil
  • 1 ½ teaspoon maple flavored syrup by lakanto
  • 1 teaspoon balsamic vinegar
  • 1 tablespoon basil, fresh
  • ¼ large red onion
  • ⅛ teaspoon black pepper

Instructions

  1. Heat a tablespoon of olive oil in a skillet over a medium heat. Finely slice the onion and add to the pan along with the balsamic and lakanto syrup. Stir well to combine. Cook for a minute or two until just softened then reduce the heat to low. Continue to cook for a further 5-6 minutes or until the onions are sweet, tender and slightly caramelized.
  2. Divide the onions between the four pancakes.
  3. Tear the prosciutto into bite sized chunks and arrange on the pancakes.
  4. Crumble the goats cheese over the top.
  5. Season with black pepper and scatter with fresh chopped basil to serve.
