This simple vegetarian Buddha bowl is inspired by classic Mediterranean flavors and offers a great balance of veggies, proteins and healthy fats.

Easy to throw together this makes a great go to fuss free weekend lunch or weeknight supper.

Ingredients

  • 1 tablespoon extra virgin olive oil by cucina
  • 1 tablespoon tomatoes
  • 1 teaspoon parsley
  • 1 teaspoon cilantro
  • 1 teaspoon pine nuts
  • ½ lemon yields lemon juice raw
  • ¼ cup cauliflower rice
  • ¼ cup baby spinach
  • 7 olives mixed mediterranean olives by 365
  • ¼ cup, crumbled feta cheese
  • 0.2 teaspoon salt
  • ⅛ teaspoon black pepper

Instructions

  1. Add the cauliflower rice to your serving bowl.
  2. Add the baby spinach leaves.
  3. Add the diced tomato to the bowl.
  4. Add the mixed olives.
  5. Crumble the feta and add to the bowl.
  6. Season everything with salt and pepper and scatter over the fresh cilantro and parsley.
  7. Slice the lemon in half and add one quarter to the bowl and squeeze the juice from the remaining half over the ingredients. Drizzle with the olive oil and scatter over the pine nuts.
