About

All the classic components are here: Charred beef, fresh lettuce and tomato, and a layer of gooey yellow cheese. Of course, you could substitute the American cheese with cheddar. Some fluffy cauliflower rice bulks this filling meal up. Feel free to include other burger ingredients that you enjoy like pickle, red onion, or mustard!

Ingredients

  • 1 pound hamburger or ground beef, 85% lean
  • 4 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon garlic
  • ¼ teaspoon onion powder
  • 1 tablespoon butter
  • 12 ounce cauliflower rice
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper, ground
  • 2 ½ ounce shredded lettuce
  • 12 grape grape tomato
  • 4 slice – each 3/4 ounce american cheese
  • 4 tablespoon mayo
  • 2 teaspoon ketchup

Instructions

  1. Combine the ground beef and olive oil in a large skillet over high heat. Break up the beef, leaving an assortment of crumbly and chunky pieces to mimic a chopped up burger patty. Stir in the first amounts of salt and pepper; garlic; and onion powder. Cook until the beef is browned and slightly charred.
  2. Transfer the cooked beef to a bowl set aside. Leave any juices in the skillet and return it to a medium heat. Toss in the butter and cauliflower rice.
  3. Add the second amounts of salt and pepper to the rice. Turn the heat to a medium-high and cook until the rice turns slightly charred.
  4. Stir the cooked beef back into the skillet and gently fold the ingredients until the beef comes back to temperature.
  5. Turn the heat back down to a low setting and stir in the lettuce and tomatoes (sliced in half). Cook for about 2 minutes – just long enough the heat the veggies but maintain their crispness.
  6. Keep the heat on low and lay 4 slices of American cheese over the skillet. Place a lid over the skillet to help melt the cheese – about 3-4 minutes. Once melted, set the skillet aside to cool temporarily.
  7. In a small bowl, stir together the mayo and ketchup. Serve this special sauce on the side or spoon it directly onto the skillet.
