These Asian inspired meatballs are packed with aromatic herbs and spices and a hint of zesty lime.

The meatballs are perfect served with a side of zucchini noodles or a portion of cauliflower rice.

Ingredients

  • 1 pound ground pork
  • 1 slice – 1" diameter ginger root, raw
  • 1 clove garlic
  • ½ each – approx 4" – 6" long hot chili peppers, red, raw
  • ¼ each – 2" diameter lime
  • 2 teaspoon, whole pieces sesame seeds
  • ⅓ cup, chopped cilantro
  • 1 tablespoon coconut oil
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Add the pork to a mixing bowl. Finely grate the ginger and mince the garlic and roughly chop the chili. Add to the mixing bowl along with the ground pork, cilantro, the zest of the lime, sesame seeds, salt and pepper.
  2. Using your hands, combine the ingredients together thoroughly, and divide into 20 even meatballs.
  3. Heat the coconut oil in a large pan over a medium/high heat. Add the meatballs and fry until golden brown all over and completely cooked through. About 8-12 minutes. Serve immediately.
