Lamb is a delicious addition to a Keto/low carb diet. It’s full of healthy fat and is a great source of Vitamin B12, iron, and zinc. These lamb meatballs are simple yet flavorful. They are delicious with cauliflower rice, roasted or sauteed vegetables, or dipped in a low-carb hummus dip!
Ingredients
- 18 oz ground lamb
- ¼ cup, sprigs dill
- 3 tablespoon parsley raw
- 2 clove garlic
- ¾ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Chop dill and garlic and add to a bowl. Grate the garlic and add the garlic and salt to the bowl.
- Add the ground lamb and mix well.
- Form 26 golf ball-sized meatballs and place on a parchment covered sheet pan. Bake at 400 degrees for approximately 20 minutes.
- Enjoy hot on their own, on a salad, or with cauliflower rice!
