Lamb is a delicious addition to a Keto/low carb diet. It’s full of healthy fat and is a great source of Vitamin B12, iron, and zinc. These lamb meatballs are simple yet flavorful. They are delicious with cauliflower rice, roasted or sauteed vegetables, or dipped in a low-carb hummus dip!

Ingredients

  • 18 oz ground lamb
  • ¼ cup, sprigs dill
  • 3 tablespoon parsley raw
  • 2 clove garlic
  • ¾ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Chop dill and garlic and add to a bowl. Grate the garlic and add the garlic and salt to the bowl.
  2. Add the ground lamb and mix well.
  3. Form 26 golf ball-sized meatballs and place on a parchment covered sheet pan. Bake at 400 degrees for approximately 20 minutes.
  4. Enjoy hot on their own, on a salad, or with cauliflower rice!
