About

Not only are these meatballs crisp brown on the outside with tender meat insides, but they’re stuffed with large chunks of tangy goat cheese! If you enjoy these fresh out the oven, the goat cheese is gooey and creamy. You can let the meatballs cool so the goat cheese is slightly more firm in texture.

Ingredients

  • 20 ounce 85% lean ground sirloin beef burgers by kroger
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper, ground
  • ¼ teaspoon thyme, dried
  • ¼ teaspoon nutmeg ground
  • ⅛ teaspoon garlic, powder
  • ⅛ teaspoon onion powder
  • 1 tablespoon mayonnaise, store bought
  • 4 ounce goat cheese

Instructions

  1. Preheat an oven to 375 degrees. In a bowl, mix together all the ingredients except for the goat cheese.
  2. Use your hands to form 12 meatballs about 1 ½ – 2 inches wide. Chop your goat cheese into 12 pieces.
  3. To stuff the meatballs, press each ball into a flat disk and place a piece of goat cheese into the center. Mold the meatball over the cheese to reshape it. Arrange the meatballs on a sheet tray lined with parchment paper.
  4. Bake the tray for approx. 32 minutes, no rotating required!
