Green Goddess is typically a salad dressing or sauce made up of an assortment of fresh herbs, garlic, and lemon juice. Who wouldn’t love a blanket of fragrant herbs pressed over the top of a juicy sirloin steak? Every bite is light, flavorful, and exciting. Go green!

Ingredients

  • 12 ounce beef steak, sirloin tip, visible fat eaten
  • ½ teaspoon salt
  • ½ teaspoon black pepper, ground
  • ½ teaspoon onion powder
  • 1 teaspoon olive oil
  • 1 clove garlic, fresh
  • ½ cup, whole pieces basil, fresh
  • 1 cup, chopped parsley
  • ¾ ounce green onions
  • 2 teaspoon olive oil

Instructions

  1. Lay 2 sirloin steaks down on a flat surface. Sprinkle the salt, pepper, and onion powder over the exposed sides of each steak. Gently press the seasonings into the meat. Then, flip the steaks over to show the bare sides.
  2. In a food processor, blend all the remaining ingredients except for the final amount of olive oil. You should have a green paste as pictured.
  3. Press the green goddess herb mixture onto the exposed sides of the steaks. Cover the surface area of the steaks all the way to each end.
  4. At this point, you may either continue on to cooking the steaks, or you may let the steaks marinate overnight while wrapped tightly in plastic wrap. Marinating will let the flavor of the herbs really get into the meat.
  5. When it’s time to cook, heat the final amount of olive oil in a medium sized skillet over medium-high heat. Place the steaks down with the green tops exposed.
  6. Place a lid on the pan and cook the steaks for 7-8 minutes. You may reduce the heat during cooking to avoid burning. You may cook for less time for a more rare steak if you wish. Don’t flip the steak at any point.
  7. Remove the lid from the pan. Serve the green goddess steaks with a squeeze of lemon juice and the juices that collected from cooking. If there is too much liquid in the pan, you may discard some at your discretion.
