This Keto soup is a great way to enjoy all your favorite hamburger flavors and toppings – minus the carbs! Our low carb soup is prepared with ground beef, smoky paprika, cayenne pepper, tomato sauce, beef stock, aromatic garlic and onion and topped with shredded lettuce, gherkins and grated cheddar cheese. This makes a delicious low carb lunch or Keto dinner option.

Can I Use a Different Meat?

We have used ground beef to provide the protein element in our Keto hamburger soup. If preferred, you may swap this for alternative ground meat. You could use pork or turkey or even a combination of meats. Please be sure to adjust cooking times and macros as needed to account for different ingredients used.

Topping Suggestions

We have topped our Keto soup with some classic hamburger fillers and flavors – lettuce, gherkins and cheese. If you would like to try some different toppings, you could use chopped cooked bacon, an alternative cheese, and even a drizzle of low carb hamburger relish if desired. This is a great dish to adapt and experiment with other low carb toppings.

Ingredients

  • 17 ½ oz hamburger or ground beef, 80% lean
  • 4 tbsp, grated cheddar cheese
  • 3 cup beef broth
  • 2 medium – 2 3/4" long sweet pickles (gherkins)
  • 1 ½ teaspoon gourmet collection smoked paprika
  • 1 tablespoon tomato paste
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon red pepper (cayenne), ground
  • 1 cup tomato sauce
  • 1 cup, shredded lettuce, iceberg
  • 1 clove garlic
  • ½ medium – 2 1/2" diameter onion
  • ½ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Heat the olive oil in a large saucepan or Dutch oven over a medium heat. Finely dice the onion and crush the garlic. Add the ground beef, onion, and garlic to the saucepan. Cook through until the beef is browned all over.
  2. Once the beef is browned, add the tomato paste, smoked paprika, cayenne pepper, salt and black pepper to the saucepan. Mix everything together well to combine. Cook for a few minutes more to warm the spices. Please feel free to adjust the quantities of spices according to personal taste.
  3. Add the tomato sauce and stock to the saucepan. Bring to a gentle boil and stir to combine. Reduce the soup to a simmer and cook for 10 minutes to allow the flavors to infuse and cook the beef through. You may use an alternative stock such as chicken or vegetable if preferred.
  4. While the soup is cooking, thinly shred the lettuce and finely slice the gherkins. Divide the soup evenly between four serving bowls. Divide the shredded lettuce evenly between the four bowls, then scatter over the grated cheese and sliced gherkins. Serve hot.
