How to Cook Chicken in An Instant Pot

The most crucial aspect of cooking your Keto instant pot chicken is to get the size right! You need to ensure that your chicken will comfortably sit in your instant pot. It is also important to add some liquid to the base of the instant pot to enable the cooking process and ensure a juicy chicken. For this recipe we have used a 3 pound whole chicken.

Serving Suggestions

This Keto chicken is a quick and easy main for the whole family. Perfect served with a hearty side salad or Keto slaw. Alternatively serve with low carb roasted vegetables for Sunday lunch. This chicken will serve four people providing a 1/4 chicken each.

Ingredients

  • 1 3 lb whole chicken, raw
  • 1 tablespoon tomato sauce
  • 1 teaspoon gourmet collection smoked paprika by mccormick
  • 1 teaspoon maple flavored syrup by lakanto
  • 1 teaspoon oregano, dried
  • 1 teaspoon lemon juice
  • 1 teaspoon cumin, ground
  • 1 cup water
  • ½ teaspoon salt, sea salt
  • ½ teaspoon garlic, powder
  • ¼ teaspoon mustard powder

Instructions

  1. Add the passata (tomato sauce), paprika, garlic powder, lemon juice, cumin, mustard powder, syrup, oregano and salt to a small bowl. Mix together well to combine. You should have a thick marinade.
  2. Arrange the chicken on an appropriate work surface. Spoon the marinade over the chicken. Use your hands to rub the marinade in an even layer all over the bird.
  3. Set the trivet in your instant pot. Add the water to the base of the pot. Sit the chicken on the trivet and close the lid. Set to cook on high pressure for 20 minutes as per the manufacturers guidelines. After this time, naturally release the pressure for 15 – 20 minutes.
  4. Remove the cooked chicken from the instant pot and sit on a foil lined grill tray. Set a broiler to high. Sit the chicken on the tray under the broiler for 5-6 minutes or until the skin is crisp and golden.
