These simple chicken thighs are pan fried until golden, then roasted in the oven with pancetta, onion and maple flavored syrup until caramelized.

Perfect served with slaw and salad!

Ingredients

  • 2 medium chicken thigh, skin eaten
  • 1 ½ ounce diced pancetta by waitrose
  • 1 tablespoon maple flavored syrup by lakanto
  • 1 tablespoon olive oil
  • ½ small red onion
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Heat the olive oil in a skillet over a medium/high heat. Add the chicken thighs skin side down and cook until well browned. Turn and then cook the other side until browned.
  3. Roughly chop the onion. Season the chicken thighs then turn upside down. Add the onion to the skillet along with the pancetta. And drizzle over the syrup.
  4. Transfer to the oven to bake for 15 minutes. Turn the thighs over and bake for further 10-12 minutes or until the chicken is completely cooked through, the skin is crisp and golden and the pancetta is caramelized.
