About

This keto recipe is a take on the traditional Thai dish. The pork is fried with aromatic herbs and spices and tossed with zesty lime to serve.

The larb works well served in lettuce wraps, with cauliflower rice, or a keto flatbread.

Ingredients

  • 1 pound ground pork
  • 1 tablespoon, chopped red onion
  • 1 clove garlic
  • 1 slice – 1" diameter ginger root, raw
  • ½ each – 2" diameter lime
  • ½ each – approx 4" – 6" long hot chili peppers, red, raw
  • 2 medium – 4 1/8" long scallions
  • ¼ cup peppermint, fresh
  • ¼ cup, chopped cilantro
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper
  • 1 tablespoon extra virgin olive oil

Instructions

  1. Heat the olive oil in a large pan over a medium heat and add the ground pork. Fry the meat until browned all over.
  2. Finely slice the chili and mince the garlic and the ginger. Add the chili, onion, ginger and garlic to the pan along with the pork. Stir well to combine, cooking until fragrant. About 1-2 minutes.
  3. Remove the pan from the heat once the pork is completely cooked through. Finely slice the scallions and add to the pan along with the juice and the zest of the lime, coriander and the mint. Stir well to combine and serve immediately.
