These quick and easy beef lettuce cups are stir fried with crisp radishes, tender mushrooms, tangy tamari sauce and smoky sesame.

These make a great hot lunch or light dinner.

Ingredients

  • 7 ounce ground beef
  • 4 inner (small) leaf romaine lettuce
  • 3 medium – 3/4" to 1" diameter radish
  • 2 medium mushrooms
  • 1 tablespoon olive oil
  • 1 tablespoon tamari sauce
  • 1 teaspoon sesame oil
  • ½ teaspoon, whole pieces sesame seeds, hulled, toasted, unsalted
  • ½ teaspoon hot chili pepper, dried, with seeds
  • ¼ small red onion

Instructions

  1. Thinly slice the radishes, onion and mushrooms. Heat the olive oil in a skillet over a medium heat. Add the beef, cooking until browned all over. Add the onion.
  2. Add the mushrooms and radishes. Continue to stir fry over a medium/high heat for 3-4 minutes more until the vegetables are fork tender.
  3. Add the tamari sauce, sesame oil and chili flakes. Stir well to combine and cook for just a minute to heat through.
  4. Divide the beef stir fry between the four lettuce cups and scatter with the toasted sesame seeds to serve.
