This simple salad is packed with classic antipasto ingredients of sundried tomatoes, olives, artichokes, salami and mozzarella.

This makes a great summer lunch or side!

Ingredients

  • 12 medium black olives
  • 4 ½ ounce mozzarella cheese
  • 4 piece tomatoes sun dried or sundried packed in oil
  • 4 heart artichoke hearts or globe, canned in oil mixture
  • 4 medium slice – 3 1/8" diameter x 1/16" – each 0.4 ounce salami
  • 2 cup arugula
  • 2 tablespoon basil, fresh
  • 1 ½ tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 2 tablespoon almonds

Instructions

  1. Add the arugula to a large serving bowl along with the black olives. Roughly tear the tomatoes and slice the artichoke hearts in half. Add to the bowl and toss to combine.
  2. Roughly tear the salami and mozzarella and add to the bowl.
  3. Add the balsamic and olive oil to a small bowl and mix to combine.
  4. Drizzle the salad with the balsamic oil and scatter over the almonds and fresh basil to serve.
