Romaine lettuce is topped with crispy bacon and juicy grape tomatoes. A perfectly portioned chicken breast upgrades this salad to a full meal. Everything ties together with the easiest honey mustard dressing you will ever make. If you have carbs to spare, chopped avocado or walnuts would make excellent healthy additions.

Ingredients

  • 3 ounce boneless skinless chicken breast
  • ⅛ teaspoon salt
  • ⅛ teaspoon black pepper
  • ⅛ teaspoon onion powder
  • ⅛ teaspoon paprika
  • ½ tablespoon olive oil
  • 1 slice – 6" long bacon
  • 3 grape grape tomato
  • 1 ½ ounce romaine lettuce
  • 2 tablespoon burman's honey mustard
  • 1 tablespoon heavy cream

Instructions

  1. Butterfly a small chicken breast. Sprinkle the salt, pepper, onion powder, and paprika over the chicken.
  2. Heat the olive oil in a small pan over medium heat and place in the chicken seasoned side down. Cook the chicken for about 4 minutes per side – until fully cooked through and slightly charred. Set the chicken aside to cool until later.
  3. Cook your bacon on the stove until it comes to a crisp. When done, chop the bacon up into chunks. Additionally, halve or quarter your tomatoes and slice your chicken breast.
  4. To quickly make your dressing, whisk together the honey mustard and cream.
  5. Arrange chopped romaine lettuce on a plate. Top this with the chopped tomatoes, sliced chicken, and chopped bacon. You may serve your dressing on the side or toss it with your salad. Enjoy!
