This crisp keto salad is loaded with flavor and texture from low carb vegetables, crunchy walnuts and tangy feta cheese.

This is a great sharing side salad served with lamb or chicken.

Ingredients

  • 4 medium – 3/4" to 1" diameter radish, raw
  • 2 tablespoon, halves walnuts
  • 2 tablespoon feta cheese
  • 1 tablespoon olive oil
  • 1 medium – 2 3/5" diameter tomato
  • ½ tablespoon maple flavored syrup by lakanto
  • ½ tablespoon lemon juice, fresh
  • ¼ large – 8 1/4" long cucumber
  • ¼ medium – 2 1/2" diameter red onion
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper, ground

Instructions

  1. Add the walnuts to a dry skillet over a low/medium heat and toast gently for 3-4 minutes.
  2. Finely dice the cucumber and tomato and thinly slice the radishes and red onion. Add to a serving bowl and toss to combine.
  3. Crumble the walnuts and feta over the salad. Season to taste and toss to combine.
  4. Whisk together the oil, syrup and lemon juice and drizzle over the salad to serve.
