Mushrooms, tomatoes, fresh mozzarella, and fresh basil make for a delightful summertime barbecue side salad, but it can really be enjoyed any time of year. Marinate the ingredients for at least one hour, and each bite will taste full of basil, garlic, and a little tang of citrus and vinegar.

Ingredients

  • 4 ounce brown mushrooms (italian or crimini mushrooms), raw, high in vitamin d
  • 2 ½ ounce grape tomato
  • 1 ¾ ounce mozzarella cheese
  • 4 leaf basil
  • ⅛ teaspoon salt
  • ⅛ teaspoon black pepper, ground
  • 1 teaspoon garlic
  • ⅛ teaspoon crushed red pepper flakes by 365
  • ½ teaspoon red wine vinegar
  • 1 teaspoon lemon juice, fresh
  • ½ tablespoon olive oil

Instructions

  1. Combine chopped mushrooms, halved grape tomatoes, and chopped mozzarella with chopped basil leaves in a mixing bowl. Toss ingredients with all remaining ingredients in the bowl.
  2. Wrap and marinate the salad in your refrigerator for at least 1 hour, but can marinate up to 24 hours in advance of eating. Enjoy for up to 3 days.
