This cobb salad consists of fresh greens, sliced hard boiled egg, crispy bacon, fresh avocado, and strips of simply seasoned steak. Since everyone has personal preferences as to the type of dressing they enjoy with a salad (buttermilk ranch, blue cheese, vinaigrette, etc), the dressing has been left out of this ingredient list. Please make sure to include the dressing you use when you log your meal.

Ingredients

  • 1 teaspoon olive oil
  • 5 ounce beef ribeye steak
  • ⅛ teaspoon salt
  • ⅛ teaspoon black pepper, ground
  • ⅛ teaspoon paprika
  • ⅛ teaspoon onion powder
  • ⅛ teaspoon italian seasoning
  • 1 large raw egg
  • 1 slice – 6" long bacon, pork
  • 1 ounce avocado
  • 1 ½ ounce lettuce

Instructions

  1. Pour the olive oil in a small pan and place in a piece of steak. Season the steak with all the seasonings and cook to your liking. Medium would be best for this recipe, unless you don’t mind juices from the steak mixing with your salad – about 6-7 minutes per side.
  2. Let the steak rest once it’s done cooking. Then, slice it or chop it into pieces.
  3. Cook an egg to hard boil (12 minutes from boiling point). Slice the egg once it is peeled and cooled. Additionally, chop a cooked pieces of crispy bacon and dice your avocado.
  4. To assemble the salad, create a base of mixed greens. Then, you can top with your steak, egg, bacon, and avocado. Use a keto dressing of your choice.
