This keto take on Aji sauce is rich with aromatic coriander, creamy mayonnaise, zesty lime and spicy peppers.

Perfect served as a dip or as a coating for baked chicken.

Ingredients

  • 4 tablespoon olive oil
  • 3 tablespoon mayonnaise
  • 2 medium – 4 1/8" long scallions
  • 1 ½ cup, chopped coriander leaf, fresh
  • 1 regular – approx 2" long jalapeno peppers, raw
  • 1 clove garlic
  • 1 tablespoon lime juice, fresh
  • 1 teaspoon lime zest
  • 1 teaspoon apple cider vinegar
  • 1 tablespoon, grated parmesan cheese

Instructions

  1. De-seed the pepper and finely slice the scallions. Add to a food processor along with the mayonnaise, olive oil, cilantro, garlic, lime juice, zest, apple cider vinegar and Parmesan.
  2. Blend until smooth and well combined. Cover and refrigerate until ready to serve.
