This tangy avo-lime mayo is simple to throw together yet brings a whole new flavour to your classic mayonnaise.

Perfect as a salad dressing, for egg salads, fajita topping or simply for dipping low carb veggies in to!

The recipe requires a keto friendly store bought mayo, but you can replace this with your own homemade mayo if you prefer.

Ingredients

  • 1 tablespoon cilantro
  • ½ cup mayonnaise
  • ½ avocado, California (black skin) avocado
  • â…› teaspoon salt
  • â…› teaspoon black pepper
  • ¼ fruit (2 in. dia) lime

Instructions

  1. Peel and de-stone the avocado and add to a food processor along with the mayonnaise. Season to taste and blend until smooth.
  2. Pick the cilantro leaves and add them to the food processor along with 2 teaspoons of the lime juice and a teaspoon of the lime zest.
  3. Pulse to combine until the dressing is smooth and creamy.
  4. Refrigerate for 10 minutes before serving.
