This simple roasted fennel is baked with sweet red onion, lemon, fresh thyme, garlic and olive oil until tender and caramelized.
This is a great side dish for roasted meats or chicken.
Ingredients
- 3 cup fennel bulb, raw
- 2 teaspoon lemon juice
- 1 ½ tablespoon olive oil
- 1 small red onion
- 1 clove garlic
- 1 tablespoon thyme, fresh
Instructions
- Preheat the oven to 375 degrees Fahrenheit.
- Cut the fennel into 1/2 inch thick slices and quarter the onion. Arrange across a sheet pan.
- Mince the garlic and add to a small bowl along with the olive oil, lemon juice and fresh thyme. Stir to combine.
- Drizzle the oil mixture over the vegetables and rub in with your hands.
- Transfer to the oven to bake for 30 minutes turning halfway through, until tender and golden.
