Bacon is the perfect ingredient to make anything tender and salty without adding extra oils or seasonings. Add just a pinch of pepper to fresh zucchini spears, and the bacon does the rest. Keto-fy all your veggies with a strip of bacon!

Ingredients

  • 12 ounce zucchini
  • ⅛ teaspoon black pepper, ground
  • 4 slice – 6" long bacon

Instructions

  1. Preheat an oven to 375 degrees. Cut a medium size zucchini into 8 spears and lay them on a seasoned sheet tray. Sprinkle the black pepper over the flesh of the zucchini.
  2. Cut 4 long pieces of bacon into halves, making 8 pieces total. Wrap a piece of bacon around each zucchini spear, tucking the ends under the spears.
  3. Bake the tray for 25 min – until the bacon is crisp and the zucchini tender.
