This simple broccoli side is loaded with crispy pancetta, salty olives and aromatic garlic.

This is a great accompaniment to pork, fish or chicken dishes.

Ingredients

  • 3 ounce diced pancetta by waitrose
  • 2 cup flowerets broccoli florets raw
  • 2 teaspoon capers
  • 1 tablespoon olive oil
  • 1 clove garlic

Instructions

  1. Add the broccoli florets to a pan of boiling water and simmer for 4-5 minutes or until fork tender. Drain completely.
  2. Heat the oil in a skillet over a medium heat and add the pancetta. Cook until browned all over.
  3. Crush the garlic and add to the pan with the capers. Cook for a further 2 minutes to soften the garlic.
  4. Add the broccoli and stir well. Cook for a further minute or two ensuring the pancetta is cooked through and golden.
