This simple yet tasty side dish is a great way to jazz up bland lettuce!

Baby romaine lettuce is broiled in a balsamic and olive oil dressing and topped with crunchy pine nuts for extra texture. This dish is a great accompaniment to roasted or grilled meats.

Ingredients

  • 1 1 small lettuce baby romaine lettuce
  • 2 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon, whole pieces pine nuts
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Slice the lettuce in half lengthways ensuring to keep the base intact.
  2. Combine the olive oil and vinegar in a small bowl.
  3. Preheat the broiler to medium and brush the lettuce liberally on both sides with the oil and vinegar dressing. Season with salt and pepper.
  4. Transfer to a grill tray and broil for 3-4 minutes on each side until tender throughout and slightly charred.
  5. Scatter with pine nuts to serve.
