These keto green beans are sautéed with butter and garlic until tender, then tossed with aromatic fresh herbs.
These would make a great side to accompany roasted chicken or pork or lamb.
Ingredients
- 3 ½ ounce green beans (string beans), raw
- 1 ½ tablespoon butter
- 1 clove garlic
- 1 tablespoon peppermint, fresh
- 1 tablespoon parsley
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Add the green beans to a pan of boiling water and simmer for 4-5 minutes until just tender.
- Melt the butter in a skillet over a medium heat. Thinly slice the garlic and add to the pan, sweating gently until tender. Add the green beans and toss in the butter. Sauté for a minute or two until hot through.
- Remove the pan from the heat and roughly chop the herbs. Add to the pan and toss to combine.
